All kinds of businesses have pivoted their normal operations to adapt to the challenges of the COVID-19 pandemic. This includes specialty coffee producers around the globe. Many contracts were canceled because of economic recession, which left farmers with a surplus of unsold coffee. Seis Familias (“six families”) is the result of blending the harvests from six microlots in the Tarrazú region of Costa Rica. Collaboration offers a new way for these coffees to be sold and provide support to producers during a very challenging year.

Producers in Costa Rica are mindful of environmentally responsible solutions in an effort to conserve water. The honey processing method is a signature of Costa Rica because this method uses significantly less water than a washed coffee. Honey process beans are laid on raised beds to ferment and dry with some of the mucilage of the coffee cherry remaining on the beans. This creates a sticky golden outer layer which resembles honey and gives the coffee a distinct sweetness.
These microlot harvests were meticulously paired at a cupping lab to achieve a harmonious blend. The flavor profile of Seis Familias features a range of sweet and citrus notes, including vanilla custard, apricot, blood orange, caramel, and roasted nuts.

Primary for the Pros (COVID-19 Relief)

Over the last several months, COVID-19 has changed our business significantly at Blueprint Coffee. While we’ve resumed operations at our two of our three locations, the present model of operations is fragile at best. We’ve changed our staffing to cohort models to greatly reduce transmission of potential cases of COVID among our staff members. Additionally, we have stringent attendance and quarantine policies. While federal legislation has granted some relief for missing work due to a COVID positive test or contact with a positive case, we’ve had several instances where our team members have quarantined while awaiting the test result of another team member only to have it come back negative and miss many days of work. In these circumstances, we are left without federal moneys to cover time off of work, and the money we raised in April and May is running out.
Many of our wholesale partners are also temporarily closed. Without a roastery or other means to continue doing business, they’ve been forced to make the extremely difficult decision to furlough their employees.

Roasting great coffee is what we do. But we also believe that doing so requires mutually beneficial relationships starting at the farms, sourcing the best lots of green coffee, and a commitment to sustainability and transparency.
To maintain these standards, we’re often required to make quick changes, which can be challenging when working with large retailers. This is why we developed the Primary Series. Each coffee in the collection will be adapted by our roasters in order to deliver its unique profile year-round. In this way, we are able to make quality coffee available in even more places.

NOTES ON SOURCING EJO HEZA
As we reflect on life before and after the pandemic, we realize a lot of the challenges have been out of our control. This is also one of the challenges of trying to build long-term relationships in the coffee industry: Life happens.
Since 2018, we have been working to build a collaborative partnership in Rwanda with Ruth Ann Church, of Artisan Coffee importers, and Gervais Kaiytare, Executive Director of Kopakama Cooperative. This partnership is dependent on commitment from the cooperative, shared responsibility and cooperation with the importer, and goals that are mutually beneficial for the farmers and Blueprint Coffee.
A nonviolent political coup occurred within the Kopakama organization this year which harms our trust that the cooperative can maintain quality and manage capacity. This also puts into question their commitment to the soil health goals we have been working towards over the past three years. In short, it puts the relationship in serious jeopardy.
So, what does this mean for Blueprint Coffee? This is not our first disappointment, and we still believe it is worthwhile to try to build relationships with our origin partners. So, we will dust ourselves off, review our options and build anew. Maybe if we can restore assurances from Kopakama, you will see this coffee again in the future.

COFFEE BACKGROUND FOR KAWO KAMINA, ETHIOPIA
We were fortunate to visit the Sheka Kawo Kamina Farm in Ethiopia last February. Incidentally, this was Blueprint Coffee’s last origin trip before the pandemic ruled out international travel for the foreseeable future. While there was no sense of what truly lied ahead, this trip was both enlightening and profound for several significant reasons.
Kawo Kamina (pronounced kay-o kah-mina) is located across the river from Kaffa, which is recognized as the native, genetic home of Arabica coffee and the origin of the word “coffee” itself. All of the farm’s coffee is planted, but would grow naturally. This is referred to as a semi-forest coffee. Wild, naturally-grown coffee represents genetic diversity that is unique to western Ethiopia — making it critical to the future survival of the coffee plant.
After harvest, the coffee cherries are dried at the farm using the natural process, then trucked to the dry mill for final hulling, sorting, and polishing. All entities are operated by Moplaco, a respected coffee exporting company in Ethiopia, owned by Heleanna Georgalis. Heleanna inherited Moplaco after the sudden death of her father. Under her leadership, Moplaco is pursuing farm-level quality and traceability. This is fairly unprecedented in Ethiopia, where coffee origins were often limited to a region until more recent years.
Even without traceability, the quality of Ethiopia’s coffee is unique and immense. This farm-specific lot from Kawo Kamina is a capstone of the movement towards greater transparency, and we feel privileged to serve it in our coffee bars. Anticipate a bright, sweet cup with notes of chocolate ganache, blackberry, grape, and dessert wine.
2020 MOPLACO VISIT
In early 2020, we visited the headquarters of Moplaco in Addis Ababa, Ethiopia and the Kawo Kamina farm in Sheka. At the farm, we were able to see the culmination of Moplaco’s farm-to-export model. The farm was beautiful, inspiring, and a true retreat where we could reflect upon the impact the coffee industry has on so many livelihoods.

The Caldas region of Colombia is part of the “Triangulo Del Café,” or the Coffee Triangle. Also known as the “Coffee Belt,” this central region is situated on the western side of the Andes Mountains. The majority of Colombian coffee is grown here because of the unique tropical climate, which allows for year-round harvesting with a few peak seasons.
Decaf Caldas is a collection of small lots located throughout Colombia that are decaffeinated before export. Decaffeinating must always take place before roasting to maintain the coffee’s flavor and quality. Removing caffeine from the green coffee before export saves a tremendous amount of time and energy, which equates to improved flavor, lower costs, and fewer emissions.
The process of decaffeination involves placing the green, unroasted coffee in a water bath with a solvent to draw out the caffeine. For this coffee, an affordable and locally made solvent called ethyl acetate is used to remove the caffeine without significantly affecting taste quality. Ethyl acetate is derived from sugarcane as it is being processed for alternative uses, such as sugar, rum, and molasses. Once caffeine has been removed from the water bath, the remaining solution is placed back into a tank with the green coffee mass to be reabsorbed. What remains is a stable, slightly more brownish-green, unroasted coffee ready for export.
Decaf Caldas delivers the rich flavor of sweet spices, caramel, and malt, without the jolt of caffeine. A subtle and pleasant citrus note of lemon brings balance to the cup.

THE CONCEPT OF RED AND THE PRIMARY SERIES
Red brings the fruit-forward and dense quality of some of the most unique specialty coffees to our Primary Series. Featuring a profile reminiscent of the coffee cherry, Red is a delightful option for brewed coffee and espresso.
To achieve a concentrated fruit flavor, Red features naturally processed coffees. This involves sun-drying the harvested coffee cherry before separating the fruit from the seeds, which will eventually become coffee beans. This ancient processing method is known to result in a cup with syrupy body and the intensity of berry fruit. With the intentionality practiced by specialty coffee producers, this method has become immensely popular among coffee fanatics in the last decade.

There is something comforting about having a go-to: whether that’s a listening ear, a favorite hiking trail, or a consistently great cup of coffee prepared just how you like it. Enter Yellow, a light and bright addition to our Primary Series to enjoy through a variety of brewing methods.
Yellow brings balanced sweetness and juicy acidity — not to be confused with the stomach-churning after-effects of spicy food. Naturally occurring acids are found in beans grown at higher elevations, packing a punch of flavor with distinct citrus and floral notes. Black coffee drinkers will appreciate the nuanced qualities of Yellow, which are most clearly present when brewed as a filtered coffee or French Press.

Primary Series: Blue (Cold Brew)
$18.00 – $36.00“Blue” one of our three Primary Series Coffee occupies the space of Cold Brew Blend at Blueprint Coffee. We use this coffee to make our in-house cold brew. Its flavor profile features rich, chocolatey sweetness, a heavy body, and balanced acidity.
We received many requests over the past few years for the “best coffee for making cold brew.” While we used Tektōn for years and felt it did a fantastic job, it’s hard to ignore the requests for something obviously marketed for cold brewing. Plus, we gained the ability to really profile Blue for cold brew and Tektōn for hot, filter brewing. Where we typically want slightly more acidity in Tektōn, we prefer more sweetness in heaviness in our cold brew.
To brew cold, follow these simple steps using a vessel of your choosing.
(If you like exact recipes and methods, check out our guide for making cold brew with the Toddy system)- Grind 12 ounces coffee coarse and place in vessel > 2qts.
- Add 2 quarts cold water.
- Stir grounds and water together.
- Allow to steep 24 hours (preferably in the refrigerator)
- Strain/filter out the grounds.
- Add 1-2 quarts of water* to the concentrated brew.
- Serve over ice.
- Enjoy

TEKTŌN SOURCING AND BLENDING
The seasonal and transparent coffee blend, Tektōn, chases a difficult goal – highlighting complexity while being approachable. Tektōn satisfies the novice or experienced coffee lover. Regular coffee changes throughout the year maintain balance and seasonality.
We commit ourselves to exhibiting the qualities of one of the most flavorful beverages in the world. To do so, we create and construct balanced, intoxicating, and special flavor experiences. Our single origin offerings are delicious and complete by themselves, but blending creates something new and unique. French wine and cocktails, like the Sazerac, guide us. By adding a small amount of five ingredients (sugar, bitters, lemon, absinthe, ice), a serving of whiskey becomes a new experience. This is a different, yet delicious, taste experience than that offered by any neat pour.
Tektōn, a seasonal coffee blend, compliments our single origin offerings. It matches the integrity of those offerings by remaining a seasonal coffee with a transparent supply chain. We embrace the future insight and taste experiences Tektōn will provide.
We didn’t change the blend too much for version 22. Instead of San Carlos, we’re using a community lot of Guatemalan coffee from farmers in Huehuetenango. This is the sweet and balanced base to the blend. To provide some sweetness and acidity highlights, we’re again using the washed coffee from Gedeb, Ethiopia. It is sourced through another long-time partner, Moplaco, in Ethiopia. It is a collection of small farms that is washed and prepared at the Mijane Werasa washing station, and then polished, sorted, and prepped for experts by the amazing team at Moplaco.

PENROSE SOURCING & INTENTION
Penrose, named after the triangle, is our seasonal espresso blend. We feel the perfect espresso is an impossible goal, but we still strive to create it. Penrose is our ever-updated offering in the quest for the perfect espresso. While the seasonal components will vary throughout the year, it is always (nearly) perfect for your hopper.
Penrose seasonal espresso blend aims to:
- be a reliable and consistent offering
- be delicious with milk and without milk
- maintain seasonality and farm-to-cup traceability
- maintain a stable price point so it can be the main espresso on our bar and the bars of many of our wholesale partners
- be easy to dial-in on an espresso grinder
Penrose also does well in the brewer – look for notes of lasting sweetness and heavy body, with a subdued acidity.
SOURCING NOTES (v27)
For the 27th version of Penrose, we go all the way back to the beginning. Just like the first version of Penrose, this one is a single lot from the Minas Gerais district of Brazil. By itself, this coffee boasted enough body, sweetness, and character to satisfy all our desires when putting together a Penrose blend. So, we didn’t overcomplicate it – we just carried forward with a single origin version of Penrose. The farm that produces this coffee is called Fazenda Riacho das Varas. It is run by 2nd generation owner Ricardo Hirofumi Yoshimatsu.

Bokkisa, Ethiopia – Instant Coffee
from $22.50We’re featuring traceable specialty coffee from Bokkisa, Ethiopia for our second release of Instant Coffee. We collaborated with Swift Cup Coffee to bring this offering to market. Just tear open a packet or scoop a half teaspoon, mix it with about 10 ounces of hot or cold water, and stir. The resulting brew is the next best thing to a freshly brewed cup at one of our coffee bars.
Are you doing a double take at this product? That makes sense because most freeze-dried/instant coffee is absolutely terrible. That is because the worst of the worst coffee is used to make most of the products in the grocery stores. We have been tasting soluble coffee from other roasters and have been impressed with the results. Our R&D process was lengthy and we found the brewing and dehydration process used by Swift Cup offered the best representation of our coffees.
SIZES, FORMATS, AND BUYING FREQUENCY
We’ve got two formats this year:
- 10-pack, 25-pack, and 50-pack boxes contain individually packaged servings in biodegradable sachets. Just rip one open and pour into a cup. Add your liquid, mix, and stir.
- 100g jars contain loose freeze-dried coffee. Measure 5g (about 1/2 teaspoon) and stir it into your liquid of choice.

ABOUT BOKKISA
Sookoo Coffee operates in Ethiopia, in the Guji zone of the Oromia region. While the western part of the Guji zone is lush with forests and jungles, the eastern side is more arid. Rich in minerals and gold, the area has experienced major deforestation. Responsible coffee growing presents an opportunity to refresh the area’s landscape both economically and ecologically.
Ture Waji worked as export manager for his family’s farms before launching Sookoo Coffee in 2018. Sookoo Coffee’s drying stations are located high in the mountains outside of Shakisso. Local farmers are incentivized to sell top-quality coffee cherries at a rate of 1 to 2 birr higher per kilogram. Prices are arranged before harvest, so farmers know what to expect without need for haggling. Sookoo Coffee also offers training, financing, and even schooling for kids to help promote education and improved coffee growing practices.

Sookoo Coffee hosted a visit from one of our team members in February 2020, at their largest drying station in the Dambi Uddo Kabele. Here, we had the opportunity to discuss Ture’s goals for Sookoo Coffee. This includes replanting native trees on coffee farms and distributing trees to member farmers. Ture embodies responsibility toward the land and people of Ethiopia, and we feel privileged to share the second harvest of our partnership.
This offering comes from Bokkisa and represents 35 farmers who are part of the group of Sookoo coffee growers. Natural processing methods complement the signature, fruit-forward flavor profile of this region’s coffee. Anticipate a sweet, syrupy cup with notes of citrus, peach, pineapple, and mango.

Instant Coffee Subscription! (Bokkisa, Ethiopia)
from $22.50We’re featuring traceable specialty coffee from Bokkisa, Ethiopia for our second release of Instant Coffee. We collaborated with Swift Cup Coffee to bring this offering to market. Just tear open a packet or scoop a half teaspoon, mix it with about 10 ounces of hot or cold water, and stir. The resulting brew is the next best thing to a freshly brewed cup at one of our coffee bars.
Are you doing a double take at this product? That makes sense because most freeze-dried/instant coffee is absolutely terrible. That is because the worst of the worst coffee is used to make most of the products in the grocery stores. We have been tasting soluble coffee from other roasters and have been impressed with the results. Our R&D process was lengthy and we found the brewing and dehydration process used by Swift Cup offered the best representation of our coffees.
SIZES, FORMATS, AND BUYING FREQUENCY
We’ve got two formats this year:
- 10-pack, 25-pack, and 50-pack boxes contain individually packaged servings in biodegradable sachets. Just rip one open and pour into a cup. Add your liquid, mix, and stir.

Over the past several months, COVID-19 has changed our business significantly at Blueprint Coffee. But while operations at our three coffee bars are mostly suspended, we’ve been fortunate to have our 83-year-old, German-made coffee roaster cranking out website orders. Combined with the overwhelming support of our community during our weekend pop-ups, our roaster allows us to keep our staff employed for the time being.
Many of our wholesale partners are also temporarily closed. Without a roastery or other means to continue doing business, they’ve been forced to make the extremely difficult decision to furlough their employees.

Snow Sprout Loose White Tea
Early Spring Snow Sprout White Tea fulfills our desire to bring something new and unexpected into the specialty coffee marketplace. Pickers in China harvest the buds of the tea plant in early spring, which constitutes an extremely small amount of the annual harvest. This prized pick showcases delicate fruity and floral taste notes and a soft, satisfying mouthfeel.
To brew, we suggest using six grams of leaves and 200mL of water at 185F. Steep together in a brewer for around two minutes. Then, decant the tea into a cup or pot making sure to get as much water off the leaves as possible when pouring. Next, infuse the leaves 2-4 more times to continue enjoying the tea as its qualities slightly transform with each cup.
Annually, we rotate two of our tea offerings. This allows us to highlight higher end teas not often found in the American market. In our opinion, the tea market in the US pales in comparison to the offerings in Asia. While we offer splendid coffees sourced from many regions of the world, most tea options available to us are simply medium-quality black and green teas. Often, tea companies scent them with essential oils or herbs. These teas definitely have a place in the market – heck, you can find Earl Grey and Jasmine Green right here on our website. However, our market often misses the finest of teas that the Asian market quickly buys and consumes.
Our partners at Kilogram Tea form relationships with reputable tea “factories” throughout Asia. As a result, their relationships and constant buying allow them access to these higher end teas, like this Early Spring Snow Sprout White Tea. We’re happy to partner with Kilogram and bring their teas to a larger group of consumers in the US.

Iron Goddess Loose Oolong Tea
