Primary for the Pros (COVID-19 Relief)
$89.50“PRIMARY FOR THE PROS” BARISTA RELIEF FUNDRAISER
Over the last several months, COVID-19 has changed our business significantly at Blueprint Coffee. While we’ve resumed operations at our two of our three locations, the present model of operations is fragile at best. We’ve changed our staffing to cohort models to greatly reduce transmission of potential cases of COVID among our staff members. Additionally, we have stringent attendance and quarantine policies. While federal legislation has granted some relief for missing work due to a COVID positive test or contact with a positive case, we’ve had several instances where our team members have quarantined while awaiting the test result of another team member only to have it come back negative and miss many days of work. In these circumstances, we are left without federal moneys to cover time off of work, and the money we raised in April and May is running out.
Many of our wholesale partners are also temporarily closed. Without a roastery or other means to continue doing business, they’ve been forced to make the extremely difficult decision to furlough their employees.
JOIN BLUEPRINT COFFEE AND HELP US PROVIDE COVID-19 RELIEF FOR LOCAL BARISTAS
Blueprint Coffee launched our fundraiser “Penrose for the Pros” earlier this year. Now, we’re offering our Primary Series to the public for bulk purchases — with a portion of each sale dedicated to a relief fund for baristas who are currently out of work.
Here’s the plan:
- $30 will be donated to the fund from the sale of every 5 lb. bag of Primary Series
Any barista who has experienced job loss as a result of the COVID-19 pandemic can apply for financial aid through Penrose for the Pros. Click here to apply.
Accepted applicants will be awarded based on the impact to their most recent wages. While employees of Blueprint Coffee baristas and wholesale partners will receive priority, any barista can apply for this aid program.
ABOUT OUR PRIMARY SERIES
Much like the three primary colors are the building blocks of art, our Primary Series represents three essential coffee flavor profiles:
- RED is ideal for filter brewing or espresso, with deep fruity tones of cherry, berry, and apple, and a syrupy body. Click here to learn more.
- YELLOW features citrus and floral notes and a crisp, light body that is well-suited for filter brewing or French Press. Click here to learn more.
- BLUE is full-bodied and intended for cold brew or filter brewing, with notes of caramel and chocolate. Click here to learn more.
Roasting great coffee is what we do. But we also believe that doing so requires mutually beneficial relationships starting at the farms, sourcing the best lots of green coffee, and a commitment to sustainability and transparency.
To maintain these standards, we’re often required to make quick changes, which can be challenging when working with large retailers. This is why we developed the Primary Series. Each coffee in the collection will be adapted by our roasters in order to deliver its unique profile year-round. In this way, we are able to make quality coffee available in even more places.

Aristides Guarnizo, Colombia
$23.50 – $47.00TEAM TASTE NOTES FOR ARISTIDES GUARNIZO
florals, strawberry, cherry, caramel
SOURCING INFORMATION FOR ARISTIDES GUARNIZO
Soil biology plays a significant and highly misunderstood role in the process of supporting the health and nutritional composition of all plants. The relationship between soil biology and the plant is mutualistic, providing the nutrition to maintain plant health and to resist pests and disease. Terroir has been understood as the influence of climate, soil, terrain, and tradition. When we visited Aristides Guarnizo’s farm in the mountains of Tarqui in Colombia, we were able to see the direct influence of soil and its interaction with terroir.
This coffee is the product of a unique and truly natural process taught by Gustavo Ramirez Castaño. This is a self-supported cyclical process that fosters the health of the coffee plants, the flavor of the coffee, and possibly the health of the farmers.
The cycle begins with the creation of a compost tea concoction that is diluted and applied to the farm. This concoction supports plant health and the microbiological health of soil and plant surfaces, which then influences the fermentation process. Bacteria and yeasts grown and accumulated during fermentation create a culture similar to kombucha scoby, which smells wonderfully aromatic. The scoby is then introduced into the compost pile. After the pile has decomposed, the runoff becomes compost tea — thus completing the cycle and beginning again.
We are excited to share this bright, sweet coffee, which is the result of sustainable practices that support soil health and foster a quality product. Anticipate a medium-bodied cup with floral notes, along with hints of strawberry, cherry, and caramel.
TARQUI + FAIRFIELD TRADING
Tarqui is a small, yet progressive, town in southern Huila. The Andes mountains run through Colombia, splitting into three ranges that run north to south. Tarqui sits between the central and eastern ranges, in the Magdelena River Valley. Fairfield Trading’s facility, located in this valley, provides an ideal location for year round harvest for growers near Tarqui, Huila.
Two years ago we traveled with Fairfield Trading Company to initiate a collaborative partnership in Colombia. Colombia boasts amazing and plentiful coffee farms. There is no limit to the potential of Colombia. This makes it a difficult place to choose and establish long-term partners. We interviewed our importer and exporter to identify a partner we felt would fit with Blueprint Coffee’s green buying vision. These conversations resulted in meeting the Guarnizo families. Their farms are located at 1800 MASL on the Cordillera Central. Further, we received an opportunity to learn more about how they approach farming and coffee processing.
THE BROTHERS GUARNIZO
The brothers, Aristides and Yaved, adopted the farming methods of Gustavo Ramirez Castaño. He uses an approach that incorporates a carefully managed anaerobic compost tea process. It intends to break down nutrients in order to assist in plant acquisition of nutrients. At first we were skeptical of this approach. However, upon seeing the health of the farms and tasting the results, we became more interested. What was even more surprising was how good the compost tea smells. Despite the use of compost and fresh manure in an anaerobic process, it has a dried cherry bourbon and sweet vanilla smell to it. We expected something more putrid and offensive. The Guarnizo’s take great care in managing their equipment and ingredients when preparing the compost tea, which is diluted, then applied to the farm.
This coffee comes from the farm of Aristides Guarnizo near Tarqui, Colombia. He is an energetic and passionate farmer who loves what he does. He says, “This is the fruit of my labor, and it’s made with lots of love every day. The effort we put into our work is great, and we do it each day because we hope you will fall in love with our coffee.” Follow him on Instagram @aristiguanizo

Estrella Divina, Peru
$19.00 – $38.00COFFEE TASTING NOTES FOR ESTRELLA DIVINA, PERU
orange, strawberry, toffee, caramel
COFFEE BACKGROUND FOR ESTRELLA DIVINA, PERU
Coffees from Peru’s Cajamarca region (pronounced ka-ha-mark-ah) are always something we look forward to having in our lineup. The quality of Peruvian coffee has evolved tremendously in recent history through the development of mutually beneficial relationships between smallholder farmers and collaborators. This offering is the result of a collaboration between 24 producers located in Estrella Divina. Estrella Divina is a small town in La Coipa, which is one of the highest altitude growing regions of Cajamarca. The microclimate is unique and ideal for coffee growing, with constant rainfall and a mix of warm air currents meeting with cool air descending from the mountains. Even the smallest producers in La Coipa process their own coffee. This creates a diversity of flavor profiles not seen elsewhere in Cajamarca.
Exporter Origin Coffee Lab started the Solidario program to give producers access to training, financing, and feedback about coffee quality. Through Solidario (in English, Solidarity) producers are given instruction on how to control fermentation and monitor drying time by hours of sunlight, which takes 12 to 20 days. These and other improvements garner better quality and higher prices going back to the producer. Future priorities of this collaboration include planting varietals, such as Yellow Caturra, which are new to the region.
This community lot is a washed process coffee with notes of sweet orange citrus and strawberry. Its texture and sweetness are reminiscent of caramel and buttered toffee. We hope you will enjoy the fruits of this collaboration between the farmers of La Coipa and Origin Coffee Lab.

Finca Tamana, Colombia
$22.00 – $44.00TASTE NOTES FOR FINCA TAMANA, COLOMBIA
caramel, praline, ripe banana
SOURCING INFORMATION FOR FINCA TAMANA, COLOMBIA
This is the fifth harvest we have purchased from Elias Roa Parra’s Finca Tamana. It has been a privilege to share in this partnership and witness the transformation of his farm over time. When Elias first purchased Finca Tamana, his family lived in a makeshift shelter on the land while planting their first crops. Today, the farm employs approximately 50 workers during the harvest season to collect coffee cherries on 40 hectares of cultivated land.
Recently, we had the opportunity to speak with Elias via Skype to learn more about operations at Finca Tamana and this most recent harvest. Sorting and processing the coffee cherries to the standards of the specialty coffee market involves skill and refinement. First, harvesters separate ripe cherries from the underripe. Ripe cherries are left to soak in a pool of water for 12 hours, with the water changed two or three times in between. Then, seeds are removed and transported to a drying room for a period of 25 to 30 days.
Elias spoke of his gratitude for the harvesters who work at Finca Tamana, saying their relationship is one of “great friendship.” According to Elias, the farm places importance on paying competitive wages and providing good food and hospitality to its workers. Elias mentioned it is not easy to find people who can do skilled processing, and that his employees are the ones who ultimately make the business grow.
With distinct sweetness and a rich, nuanced flavor profile, this Colombian coffee is medium bodied and delivers hints of caramel, praline, and ripe banana.

TASTE NOTES FOR DECAF CALDAS E.A., COLOMBIA

SOURCING INFO FOR DECAF CALDAS E.A., COLOMBIA
The Caldas region of Colombia is part of the “Triangulo Del Café,” or the Coffee Triangle. Also known as the “Coffee Belt,” this central region is situated on the western side of the Andes Mountains. The majority of Colombian coffee is grown here because of the unique tropical climate, which allows for year-round harvesting with a few peak seasons.
Decaf Caldas is a collection of small lots located throughout Colombia that are decaffeinated before export. Decaffeinating must always take place before roasting to maintain the coffee’s flavor and quality. Removing caffeine from the green coffee before export saves a tremendous amount of time and energy, which equates to improved flavor, lower costs, and fewer emissions.
The process of decaffeination involves placing the green, unroasted coffee in a water bath with a solvent to draw out the caffeine. For this coffee, an affordable and locally made solvent called ethyl acetate is used to remove the caffeine without significantly affecting taste quality. Ethyl acetate is derived from sugarcane as it is being processed for alternative uses, such as sugar, rum, and molasses. Once caffeine has been removed from the water bath, the remaining solution is placed back into a tank with the green coffee mass to be reabsorbed. What remains is a stable, slightly more brownish-green, unroasted coffee ready for export.
Decaf Caldas delivers the rich flavor of sweet spices, caramel, and malt, without the jolt of caffeine. A subtle and pleasant citrus note of lemon brings balance to the cup.

$18.00 – $36.00**PRIMARY RED DOES NOT ROAST ON MONDAYS. ORDERS PLACED FOR THIS COFFEE BETWEEN FRIDAY AND MONDAY WILL BE ROASTED ON TUESDAYS**
PRIMARY SERIES RED COFFEE TASTE NOTES
apple, berry, dense body, fruity
THE CONCEPT OF RED AND THE PRIMARY SERIES
Red brings the fruit-forward and dense quality of some of the most unique specialty coffees to our Primary Series. Featuring a profile reminiscent of the coffee cherry, Red is a delightful option for brewed coffee and espresso.
To achieve a concentrated fruit flavor, Red features naturally processed coffees. This involves sun-drying the harvested coffee cherry before separating the fruit from the seeds, which will eventually become coffee beans. This ancient processing method is known to result in a cup with syrupy body and the intensity of berry fruit. With the intentionality practiced by specialty coffee producers, this method has become immensely popular among coffee fanatics in the last decade.
Red is one of our three Primary Series of blends — a nod to the primary colors of red, yellow, and blue. Much like these three colors are the building blocks of art, our Primary Series represents three essential coffee flavor profiles:
• RED is ideal for filter brewing or espresso, with deep fruity tones of cherry, berry, and apple and a syrupy body.
• YELLOW features citrus and floral notes and a crisp, light body that is well-suited for filter brewing or French Press.
• BLUE is full-bodied and intended for cold brew or filter brewing, with notes of caramel and chocolate.

YELLOW AND PRIMARY SERIES CONCEPT AND INFORMATION
There is something comforting about having a go-to: whether that’s a listening ear, a favorite hiking trail, or a consistently great cup of coffee prepared just how you like it. Enter Yellow, a light and bright addition to our Primary Series to enjoy through a variety of brewing methods.
Yellow brings balanced sweetness and juicy acidity — not to be confused with the stomach-churning after-effects of spicy food. Naturally occurring acids are found in beans grown at higher elevations, packing a punch of flavor with distinct citrus and floral notes. Black coffee drinkers will appreciate the nuanced qualities of Yellow, which are most clearly present when brewed as a filtered coffee or French Press.

Primary Series: Blue (Cold Brew)
$18.00 – $36.00“Blue” one of our three Primary Series Coffee occupies the space of Cold Brew Blend at Blueprint Coffee. We use this coffee to make our in-house cold brew. Its flavor profile features rich, chocolatey sweetness, a heavy body, and balanced acidity.
We received many requests over the past few years for the “best coffee for making cold brew.” While we used Tektōn for years and felt it did a fantastic job, it’s hard to ignore the requests for something obviously marketed for cold brewing. Plus, we gained the ability to really profile Blue for cold brew and Tektōn for hot, filter brewing. Where we typically want slightly more acidity in Tektōn, we prefer more sweetness in heaviness in our cold brew.
To brew cold, follow these simple steps using a vessel of your choosing.
(If you like exact recipes and methods, check out our guide for making cold brew with the Toddy system)- Grind 12 ounces coffee coarse and place in vessel > 2qts.
- Add 2 quarts cold water.
- Stir grounds and water together.
- Allow to steep 24 hours (preferably in the refrigerator)
- Strain/filter out the grounds.
- Add 1-2 quarts of water* to the concentrated brew.
- Serve over ice.
- Enjoy
* feel free to experiment with other liquids to dilute such as milk or tonic water
The coffee in Blueprint Primary Series: Blue (cold brew blend) will change occasionally to keep up with seasonality and freshness. See the “stats” page for the current and former coffees.

Tektōn (Seasonal Blend)
$19.25 – $38.50TEKTŌN COFFEE TASTE NOTES (v23)
almond, citrus, brown sugar
TEKTŌN SOURCING AND BLENDING
The seasonal and transparent coffee blend, Tektōn, chases a difficult goal – highlighting complexity while being approachable. Tektōn satisfies the novice or experienced coffee lover. Regular coffee changes throughout the year maintain balance and seasonality.
We commit ourselves to exhibiting the qualities of one of the most flavorful beverages in the world. To do so, we create and construct balanced, intoxicating, and special flavor experiences. Our single origin offerings are delicious and complete by themselves, but blending creates something new and unique. French wine and cocktails, like the Sazerac, guide us. By adding a small amount of five ingredients (sugar, bitters, lemon, absinthe, ice), a serving of whiskey becomes a new experience. This is a different, yet delicious, taste experience than that offered by any neat pour.
Tektōn, a seasonal coffee blend, compliments our single origin offerings. It matches the integrity of those offerings by remaining a seasonal coffee with a transparent supply chain. We embrace the future insight and taste experiences Tektōn will provide.
Our 23rd blend iteration of Tektōn brings coffee from Tanzania into our roastery for the first time. The bright, citrus-forward coffee is grown on the Lyamungo farm on the slopes of Mt. Kilimanjaro. The other nearly half of the blend is made up of ‘Fronteras del Cauca’ Colombia. It is a community lot from the town of El Tambo, Cauca and sourced through our partnerships with Fairfield Trading and CCS. It is a round and sweet coffee, also found in our current blend of Penrose (v28). The coffees from Tanzania and Colombia merge in Tektōn to present a cup that is balanced with incredible complexity. Citrus acidity and caramel sweetness will be the starring taste notes, but look for both texture and the aftertaste of this cup add characteristics that truly elevate the drinking experience of Tektōn.

Penrose (Espresso Blend)
$18.25 – $36.50PENROSE TEAM TASTE NOTES (v28)
nougat, almond paste, tobacco, malted chocolate, apple
PENROSE SOURCING & INTENTION
Penrose, named after the triangle, is our seasonal espresso blend. We feel the perfect espresso is an impossible goal, but we still strive to create it. Penrose is our ever-updated offering in the quest for the perfect espresso. While the seasonal components will vary throughout the year, it is always (nearly) perfect for your hopper.
Penrose seasonal espresso blend aims to:
- be a reliable and consistent offering
- be delicious with milk and without milk
- maintain seasonality and farm-to-cup traceability
- maintain a stable price point so it can be the main espresso on our bar and the bars of many of our wholesale partners
- be easy to dial-in on an espresso grinder
Penrose also does well in the brewer – look for notes of lasting sweetness and heavy body, with a subdued acidity.
SOURCING NOTES (v28)
Our approach to this iteration is old and new. We maintain our intention to find a balanced espresso that is great by itself and with milk. This time around, what’s new is how we’re approaching the coffees. Typically, we use a large portion of a very balanced and round washed coffee that isn’t too aggressively acidic. We add depth with a small amount of natural process coffee that is aggressive in fruity notes and texture. The result = Penrose. This year, we’re taking cues from our Penrose blends of past to make some tweaks. The large portion of v28 will be a washed coffee from our partners at Fairfield in Colombia. This “Fronterras del Cauca” is a blend from many small farmers in the El Tambo, Cauca area. We’ve found these high-grown lots often are brighter and more zippy than many of the coffees we use as a Penrose base. So, to balance this out a bit better, we’re using a natural Brazil from Fazenda Caixtas in Brazil to round it out. This coffee has that texture we’re after, but not as intense of a fruitiness as the naturals from Ethiopia or Honduras we often use.

Bokkisa, Ethiopia – Instant Coffee
from $22.50We’re featuring traceable specialty coffee from Bokkisa, Ethiopia for our second release of Instant Coffee. We collaborated with Swift Cup Coffee to bring this offering to market. Just tear open a packet or scoop a half teaspoon, mix it with about 10 ounces of hot or cold water, and stir. The resulting brew is the next best thing to a freshly brewed cup at one of our coffee bars.
Are you doing a double take at this product? That makes sense because most freeze-dried/instant coffee is absolutely terrible. That is because the worst of the worst coffee is used to make most of the products in the grocery stores. We have been tasting soluble coffee from other roasters and have been impressed with the results. Our R&D process was lengthy and we found the brewing and dehydration process used by Swift Cup offered the best representation of our coffees.
SIZES, FORMATS, AND BUYING FREQUENCY
We’ve got two formats this year:
- 10-pack, 25-pack, and 50-pack boxes contain individually packaged servings in biodegradable sachets. Just rip one open and pour into a cup. Add your liquid, mix, and stir.
- 100g jars contain loose freeze-dried coffee. Measure 5g (about 1/2 tablespoon) and stir it into your liquid of choice.
We’ve got a few buying options!
- “Just send me one now!”: You’re in the right place! Just pick 10-packs, 25-packs, 50-packs, or a 100g jar and we’ll charge you once and send one as soon as we can.
- “Send me one now AND every month”: Visit the instant coffee subscription page and pick any size and we’ll send one right away and keep sending you one every month until we’re out. PLUS, YOU WON’T PAY SHIPPING!
The specialty instant Bokkisa coffee from Ethiopia is an amazing alternative to all those times when you can’t get to a Blueprint Coffee Bar or you don’t have your scale, dripper, and burr grinder with you. Some great situations for Blueprint Instant:

ABOUT BOKKISA
Sookoo Coffee operates in Ethiopia, in the Guji zone of the Oromia region. While the western part of the Guji zone is lush with forests and jungles, the eastern side is more arid. Rich in minerals and gold, the area has experienced major deforestation. Responsible coffee growing presents an opportunity to refresh the area’s landscape both economically and ecologically.
Ture Waji worked as export manager for his family’s farms before launching Sookoo Coffee in 2018. Sookoo Coffee’s drying stations are located high in the mountains outside of Shakisso. Local farmers are incentivized to sell top-quality coffee cherries at a rate of 1 to 2 birr higher per kilogram. Prices are arranged before harvest, so farmers know what to expect without need for haggling. Sookoo Coffee also offers training, financing, and even schooling for kids to help promote education and improved coffee growing practices.
2020 GUJI VISIT
Sookoo Coffee hosted a visit from one of our team members in February 2020, at their largest drying station in the Dambi Uddo Kabele. Here, we had the opportunity to discuss Ture’s goals for Sookoo Coffee. This includes replanting native trees on coffee farms and distributing trees to member farmers. Ture embodies responsibility toward the land and people of Ethiopia, and we feel privileged to share the second harvest of our partnership.
This offering comes from Bokkisa and represents 35 farmers who are part of the group of Sookoo coffee growers. Natural processing methods complement the signature, fruit-forward flavor profile of this region’s coffee. Anticipate a sweet, syrupy cup with notes of citrus, peach, pineapple, and mango.

Instant Coffee Subscription! (Bokkisa, Ethiopia)
from $22.50We’re featuring traceable specialty coffee from Bokkisa, Ethiopia for our second release of Instant Coffee.
Measure 5g (about 1/2 teaspoon) and stir it into your liquid of choice.
We’ve got a few buying options!
- If you want just one box, then check out the Bokkisa Instant Coffee page.
- “Send me one now AND every month”: you’re on the right page! Just pick any size and we’ll send one right away and keep sending you one every month until we’re out. PLUS, YOU WON’T PAY SHIPPING!

Tip Jar: Barista Relief Fund
$1.00 – $100.00DONATE DIRECTLY TO OUR BARISTA RELIEF FUND
Over the past several months, COVID-19 has changed our business significantly at Blueprint Coffee. But while operations at our three coffee bars are mostly suspended, we’ve been fortunate to have our 83-year-old, German-made coffee roaster cranking out website orders. Combined with the overwhelming support of our community during our weekend pop-ups, our roaster allows us to keep our staff employed for the time being.
Many of our wholesale partners are also temporarily closed. Without a roastery or other means to continue doing business, they’ve been forced to make the extremely difficult decision to furlough their employees.
Any barista who has experienced job loss as a result of the COVID-19 pandemic can apply for financial aid through Penrose for the Pros. Click here to apply.
Accepted applicants will be awarded up to $300, based on a percentage of the impact to their most recent wages. While employees of Blueprint Coffee wholesale partners will receive priority, any barista can apply for this aid program.
THANK YOU FOR SUPPORTING BLUEPRINT COFFEE
In these challenging times, we appreciate your decision to support our local operations and our team of talented baristas. Blueprint Coffee has been a proud member of the St. Louis community since we opened our first location on the Delmar Loop in 2013. And we can’t wait to welcome the public back inside our coffee bars when it is safe to gather again.
Please share this opportunity with the barista in your life who may be experiencing financial difficulties. If you have any questions about this program, please contact [email protected].
