COFFEE BACKGROUND

Around 500 smallholder producers who grow coffee in and around San Antonio Huista comprise CODECH. The small town of San Antonia Huista sits in the highlands of Huehuetenango. Each farmer harvests and processes their coffee before it leaves the farm. They deliver the seeds in parchment to the co-op, which mills the coffee and sorts it into microlots, community lots like this one, or larger co-op lots. Our importer partner, Atlantic Specialty, is so impressed with the consistent quality of CODECH’s offerings that they’ve bought coffees from this cooperative for 16 years running.

Much of Huehuetenango’s population traces their heritage to indigenous Mayan populations — the members of CODECH include Popti, Mam, and Q’anjob’al peoples. Today, these smallholders steward their farms with deep respect for the mountainous land. They grew this coffee organically, without the use of chemical pesticides, and harvested and processed it with care — producing an exceptionally smooth and balanced cup.
