COFFEE BACKGROUND
Finca Montes Urales is a family-owned coffee farm near Apaneca, in western El Salvador. The Apaneca-Ilamatepec is a renowned growing region, with the rich volcanic soil and temperate climate that provide ideal conditions to produce high-quality coffees.
All 35 hectares of the farm are dedicated to coffee cultivation. Workers at the farm meticulously harvest and sort ripe coffee cherries by hand. Like most coffee in El Salvador, this coffee is washed: the cherries are depulped the same day they’re harvested. Then, workers ferment the seeds in open-air tanks for 12–24 hours. Finally, they wash away any remaining mucilage and carefully spread the seeds on raised beds, where they dry in the sun for up to 20 days.
Montes Urales embodies responsible, sustainable coffee production. Their work is rooted in respect for their farmers and community, for the region’s natural resources, and for the rich cultural heritage of El Salvador’s traditional coffee farming practices.
