SAN CARLOS BACKGROUND
Specialty coffee is a product of collaboration: between producers and mills, importers and exporters, cafés and baristas. This is why we are passionate about relationships and celebrating all those who contribute to the brews we serve in our coffee bars. As you enjoy a cup of Guatemala San Carlos, we wish to share more about Jorge Alberto Zamora and our partners at Los Volcanes.
For more than 50 years, Jorge Alberto Zamora has managed three historic farms in Antigua, Guatemala. This includes Finca San Carlos. Jorge was born on the farm San Carlos which was also managed by his father for 65 years. Many of the plants on this farm have transformed from seedling to adult during Jorge’s lifetime. Locally, the farm is renowned for its lucrative harvest season which can be up to three months longer than other farms in the region. After harvest, the coffee cherries from San Carlos are processed by Los Volcanes.
Collaboration goes one step further at Los Volcanes’ wet mill and quality lab in Antigua, Guatemala. A team led by cupping champion Carolina Franco evaluates each lot and provides feedback to the farmers supported by Los Volcanes. This feedback helps farmers like Jorge produce a higher quality coffee cherry and achieve greater profits for their harvest — thus creating a mutually beneficial relationship.
