Understanding Extraction (2hrs) – Calibration Cupping is a prerequisite This course combines theoretical exploration of coffee brewing with tasting and troubleshooting exercises. Baristas are introduced to the brew control chart, TDS (strength), and extraction. Then, baristas learn how the combination of the three apply to coffee brewing. Attendees will brew and chart extractions using real brews and then measure TDS. Using the recipe and TDS, baristas learn how to measure extraction. Then, this practice and data is used in an exercise to improve the quality of a brewed coffee.
Required for: all lead baristas/managers serving Blueprint Coffee Prerequisites: Seed to Cupping; Espresso, Drip Brewing or Manual Brewing; the equivalent of 6-months of full-time work as a barista
