This advanced course approaches espresso recipes from a tasting perspective and an extraction perspective. The course starts with a group tasting and calibration of an espresso using our practical dial-in chart that uses taste qualities to improve the espresso recipe and quality. Next, the practice of measuring the TDS of an espresso is taught and practiced. Attendees will learn how measuring TDS can inform an espresso recipe and grind setting in order to improve espresso quality. The group then uses the tasting and TDS tools to dial-in a single-origin coffee. Lastly, tips and tools for the best espresso preparation are shared among the group.
Required for: all lead baristas/managers serving Blueprint Coffee
Prerequisites: Seed to Cupping; Espresso, Drip Brewing, or Manual Brewing; Calibration Cupping; the equivalent of 6-months of full-time work as a barista
