Wonago is a small region and town within the larger Yirgacheffe growing zone of Ethiopia. Coffees in this lot are produced by small-holder farmers and brought to centralized markets of the Ethiopian Commodities Exchange (ECX). The coffees are cupped and graded by ECX officials before being offered at auction. From there, the coffees were purchased by Heleanna Georgalis of the Moplaco Trading Company. Heleanna and her team sort the coffee meticulously and blend them into lots available for export. The Collaborative Coffee Source brought this coffee into the US and to our attention. We have started working with them because of the incredible quality we’re finding in their Ethiopian sourcing.
Coffees from Yirgacheffe are known for their expressive fruitiness and floral qualities. This cup gathers everything wonderful about this unique origin and presents it with clarity and complexity that make washed Ethiopian coffees one of our perennial favorites.
